Confronting the Epidemic through Nutrition Research and Policy

Darlene Moppert, M.S., R.D., L.D./N.

Darlene Moppert, M.S., R.D., L.D./N., has held the position of program manager for nutrition education and training/food and nutrition services for Broward County Public Schools since 1994. In that role, she helped craft the district’s wellness policy. In her 30 years leading nutrition programs, she has also served as the director of food and nutrition services for Plantation General and has held adjunct faculty positions teaching nutrition at Florida International University and McFatter Technical School. Co-author of the recently released Fort Lauderdale Diet, Ms. Moppert is also past president of the Broward and Florida Dietetic Associations and a past delegate to the American Dietetic Association. Ms. Moppert is a registered dietitian with a master’s degree in nutrition and dietetics from Florida International University.

Presentation Title: School Nutrition and Wellness: An Integrated Approach

Objectives:

  • Understand the role of the local SHAC (school health advisory council/committee) to implement an integrative health model for student wellness
  • Recognize opportunities for community, business/industry, and professional groups or individuals to partner with a school districts’ food and nutrition services departments (cafeteria) to support community nutrition objectives for child wellness. (Moppert will discuss the partnering with PCRM to pilot vegan hot entrees in BCPS.  She will also discuss other community endeavors like partnering with the Junior League of Greater Fort Lauderdale to provide nutrition literacy kits for 150 second grades with a primary emphasis of encouraging plant based nutrition.)
  • Determine one personal objective to support your community’s efforts to improve child wellness relative to nutrition

Outcomes: Participants will be able to provide examples of how community involvement may impact school nutrition and how they may support these efforts.  They will also be familiar with current programs piloted in several area school cafeterias.
